🧑‍🍳 Recipe:

Ingredients:

  • 2 tablespoons coconut oil or vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • ½ teaspoon chili flakes (optional)
  • 1 can (14 oz) diced tomatoes
  • 2 cans chickpeas, drained and rinsed
  • 1 cup coconut milk
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  1. Heat oil in a large skillet over medium heat. Sauté onion until soft (5 min).
  2. Add garlic, ginger, and spices. Cook until fragrant (1–2 min).
  3. Stir in tomatoes and chickpeas. Simmer for 10 minutes.
  4. Add coconut milk and simmer another 10 minutes until thickened.
  5. Season with salt and top with fresh cilantro. Serve with rice or naan bread.
